I use something called a Blackmagic HD recorder. Here is an amazon link for it. link
It comes with a program that allows you record straight from the card. It uses a small PCIExpress slot in your computer. It goes straight from the Xbox(or PS3) with HDMI to the PC then from the PC to the TV. Everything that goes through the game gets recorded. It can even do everyone's voices(except for your own) if you setup the xbox to bring all voice audio to both speakers and headset. If you need to record your own voice, you would have to bring up voicerecorder on Windows and splice the two together.
This whole process can eat up some HHD space but it isn't too bad. It also helps to have a reasonably fast computer to record HD. Most dual to greater core processor computers with a fast hard drive can do it. You can also record using Component cables(RGB, The Red/Green/Blue etc).
It records in RAW .avi format so you will need some software to convert it down to something usable to upload to YouTube. Each one of those videos once done editing is around 140-300 megs. They are a couple gigs per video when recorded in RAW format.
I use Sony Vegas Studio to edit the video and convert it. You could use Microsoft video converter but it is pretty generic and not very good in most cases.

Looks a quality creation. Some of those c-p/barrier placements are a real lesson to me, good work.

I really wish you guys could race it. I am proud of that one. I spent 3 hours building it and another hour tweaking it after feedback a few days later. Even if you tried to copy it from the site and the video it would never be the same. I mean i was tweaking things like buses in the middle of an intersection by 2 feet and changing the angle by a coupe degrees .
